Middle Eastern Salad

Growing up, food was an unusual combination o f Italian, Southern and Middle Eastern cuisine.  My Dad's family was Italian.  My Mom's family was from Georgia.  Two of my Dad's brothers married two Armenian sisters.  We had quite an assortment of good food.  Here is a great salad my aunts used to make either as a side or for lunch you might like to try:

2 cups cooked bulgar wheat; 1 teaspoon lemon juice; 1 tablespoon chopped mint; two tablespoons extra virgin olive oil 2 diced ripe tomatoes, 1 can chopped black olives

combine cooked wheat lemon juice, olive oil and mint.  toss in the diced tomatoes and chopped black olives.

 I would love to try that but we'll have to keep out the black olives lol

I have not tried bulgar wheat before...but the salad sounds really good...I like olives and tomatoes:)
