I found this recipe in Taste of Home. I have a friend from Germany. I made it for her one year and she told me it is exactly like the stollen her mom used to make. Now I make one for her every year. Hope you like it.. Also, I divide the dough in half and make two loaves baked for 37 minutes instead of one loaf.
2 1/4 cups all purpose flour; 1/2 cup sugar; 1 1/2 teaspoon baking powder; 1/4 teaspoon salt; 7 tablespoons cold butter; 1 cup ricotta cheese; 1/2 cup mixed candied fruit (fruit cake mix); 1/2 cup golden raisins; 1/3 cup slivered almonds toasted; 1 teaspoon vanilla; 1/2 teaspoon almond extract; 1/2 teaspoon lemon peel; 1 egg; 1 egg yolk (I just use 2 eggs instead) confectioner sugar; rum
- Pour 1/4 cup rum over fruit and let set for at least 1/2 hour.
- In large bowl combine all dry ingredients except nuts and fruit.
- cut in 4 tablespoons cold butter until mixture resembles fine crumbs.
- In small bowl combine fruit, nuts, ricotta, eggs, lemon peel and extracts.
- add to dry mixture and stir until just combined.
- Turn onto floured surface and knead dough about 5 times.
- cut dough in half. Using your hands form each half into an oval about 6 by 8 inches (give or take).
- Fold 1 half of long side of oval over to within 1 inch of opposite end.
- Press edge lightly to seal.
- Place on a greased cookie sheet. (I use parchment paper.) Curve ends up slightly.
- Bake at 350 degrees for approximately 37 minutes or until golden brown.
- Melt remaining butter and add 1/4 cup rum to it and mix well. Brush tops and sides thoroughly with butter mixture when loaves come out of the oven. Dust heavily with powdered sugar. Cool completely on wire racks then dust again with powdered sugar.
- If you wish to freeze the loaves wrap them well in plastic wrap and then in foil. Will keep for 3 months.
