Seafoam candy

  • 1 c. sugar
  • 1 c. dark Karo syrup (corn syrup)
  • 1 Tbsp. vinegar
  • 1 Tbsp. baking soda
  • melted milk chocolate

Butter a cookie sheet that has sides and lay it on folded towels.  Set aside the soda.  Combine 1st three ingredients in a large pan.  Using a candy thermometer, cook the mixture to 300°, stirring constantly. Do not scrape edges as it can give a scorched taste. Remove from heat and add soda -- stir this in very quickly and pour onto cookie sheet (it will foam up.)  Do not disturb until cool.  Cut or break into squares and dip in the melted chocolate.  Store in airtight container.
