POZOLE VERDE DE ELOTE / Green Pozole with Fresh Corn


2 1/4 lb. fresh corn kernals
1 gal. water
1 lb. pork, stew meat and ribs
1 chicken, in serving pieces
6 poblano chiles, without seeds
1/2 lb. tomatillos
3 serrano chiles without seeds
1 head of garlic, roasted
1 sprig of cilantro
- salt to taste



Serve with:
chopped onion
sliced radish
oregano
chile de arbol blended with vinager and lime
shredded cabbage


Cook the corn kernals in the water with the pork and chicken. Meanwhile, blend together the poblano chiles, serrano chiles, garlic,tomatillos, and cilantro. When the meats are tender, add the blended ingredients and let cook 15 to 20 min. Taste for salt and serve.
