I find that I end up making most of my meals "last minute" because, well, that's just the type of dishes my family will eat. (i.e. spaghetti, pasta with broccoli, pasta with basil and tomato, homemade mac and cheese, chicken a la king [chicken in a roux/cream-type sauce] -- We actually eat a lot of pasta when I think about it.)
Anyone have any ideas for these types of dishes that will work as a freezer dish?
Dinnertime is very stressful for me. My kids get home at 4:00, DH gets home at 4:45, and by 5:15 we're eating dinner. I'm trying to get dinner on the table while struggling with the kids to get their homework started, all while trying to keep things somewhat calm for my DH when he gets home from his stressful job. I'm hoping to find dishes that I can easily pull out and cook, but most of my recipes seem to taste better when prepared just before serving.
(Oh, yeah -- meat dishes are few and far between because I'm the only one who likes chicken, beef, pork....)
