Chicken Nuggets and Flaxseed meal update

Below  is the old post I posted in June. Just wanted to let you know that I tried it last night without the flax-seed meal and used flour instead.  The flax-seed meal  works much better than the flour because the flax-seed meal holds the pureed vegetable to the meat much better than flour. My little guy loves them with the flax-seed meal. He would hardly touch them last night with the flour and I think it was b/c he could taste the broccoli more. LOL!!! Just an update for you guys.

I am new to this group and just bought his cookbook this weekend.  I was wanting to make the chicken nuggets from the cookbook tonight but I have a question about the flaxseed meal.  Do you think I could substitute the flaxseed meal with whole weat flour? Any suggestions would be appreciated.

  • I made the nuggets last night using turkey cutlets.  I didn't have any flaxseed either, so I added about 1/4 cup of wheat germ to the breading mixture instead.  It turned out well and gave that crisper breading texture I'll bet the flaxseed helps with.

  • I made the chicken nuggets last night and baked them instead. You could taste the broccoli a little more when baked, but my little one ate them anyway.

  • I made these with cauliflower puree and DD ate them up!  The pan frying was a bit messy and tedious for me, has anyone tried baking them?
