Chicken Quesadilla's

I cooked the chicken quesadilla's recipe Friday night.  It turned out better than I thought. My little guy ate it up and so did the hubby.  I eliminated the beans and used puree spinach instead of the squash.  The only thing I wish I had done differently is after taking the quesadilla's out of the oven I cook them in the skillet for a few minutes to make the tortillas a little crispier.  Other than that it was pretty good.  Even the hubby said he would eat it again.  I eliminated the beans b/c dear hubby won't eat them. LOL!!! Also when I pureed the spinach I put a little sour cream in with the spinach.  Just thought someone might want to know how the recipe turned out.
