CAROLYN'S POOR MAN'S LOBSTER

4 ounce fresh or frozen haddock fillet *
Water
1/2 teaspoon white vinegar
1 1/2 teaspoons salt
2 teaspoons granular Splenda or equivalent liquid Splenda
1 tablespoon butter, melted
Garlic or garlic powder, to taste

Place the fish in a deep-sided skillet. Add just enough water to cover the fish. Add the remaining ingredients and bring to a boil. Use this much vinegar, salt and Splenda per fillet. Boil 5-8 minutes or until the fish turns white and feels firm but isn't flaking. Remove the fish from the water with a slotted spoon. Place on a broiler pan and broil 2 minutes per side to dry out the fish. Combine the melted butter and garlic powder; serve the fish dipped in the garlic butter.

Makes 1 serving
Can be frozen

* A 4 ounce fillet will yield between 2 1/2 and 2 3/4 ounces of cooked fish.

Per Serving: 190 Calories; 12g Fat; 19g Protein; trace Carbohydrate; trace Dietary Fiber; 0g Net Carbs

 I'm sue glad to see this post and will definitely try it and use it anothe way too, break it into chunks and add mayo, finely chopped green onion, and finely chopped green pepper along with some hot sauce to make a seafood salad.  I used to buy the mock crab but like a lot of other mock things it was full of carbs and i just loved it.  Wish me luck.  It will really brighten up my lunch time.

 I was wonderring if you've tried this yet.  Anyway, it's ll am and I came here to copy the recipe.  I'll let u know how my salad turns out if I don't eat it all with the butter and garlic first. lol

 Just a quick report.  I made this yesterday but used Tilapia instead of the fish recommended (probably a mistake).  It did firm up after cooking in the vinegar water so that part was fine.  I wanted to use it for making seafood salad that I used to use the mock crab for.  I don't think it could ever be mistaken for lobster but I will try it again with different fish.  My family doesn't like a "fishy" fish so usually use Flounder or Cod for frying.  (that's why I had the Tilapia left over lol).  I made the seafood salad as I mentioned above, added some lemon juice, tobasco, chopped green onions, celery and green pepper.  Lots of mayo and it was pretty good but still tasted to fishy for me but I know that's my fault.  I love this salad and it will be almost no carbs so I'll buy a bag of better fish and try again  I'm happy to get this recipe and I just need to keep experimentiong like we do with most recipes to make them our own.
