Quick and Easy Casserole Dish

I made up a really good simple casserole dish the other night.  I was in a quick hurry b/c it was late and this is what I did

1 box of the corn taquitos (I used steak but you could use any kind)(Don't use the flour kind it will make it tooo mushy)

1 large can of enchalada sauce

1 bag of shredded taco cheese

I layered the taquitos in the bottom of the pan, added the can of enchalada sauce, then the cheese Baked it at 350 for 20 mins.  It was yummy and quick.

I MAKE THIS QUICK AND VERY TASTY CASSEROLE, AND IT CAN BE DONE IN A LARGE FRYING PAN IF YOU WANT.

COOK 1/2 PK, NOODLES, WHILE THEY ARE COOKING, SAULTE I CHOPPED ONION (LARGE SKILLET)

DRAIN NOODLES, ADD 2 CANS DRAINED TUNA, I CAN CREAM OF MUSHROOM SOUP. STIR TO BLEND, THEN ADD NOODLES AND MIX WELL. HEAT THROUGH, OR PUT IN BAKING DISH AND POP IT IN THE OVEN AT 350 FOR ABOUT 1/2 HR.

We love enchiladas; even tastier with homemade sauce:

Zucchini and Cheese Enchiladas
8 corn tortillas
Olive oil
2 med. zucchini, sliced
1/4 c. onion, chopped
1 sm. can green chili
1 can whole pitted black olives
1/2 to 3/4 lb. Monterey Jack cheese (I use less cheese and mix it with 1 to 1.5 cups of refried beans)
Enchilada sauce (recipe follows for homemade sauce)
 Saute zucchini and onions in olive oil. Pour some sauce in the bottom of an oven proof 8 x 11 x 2 inch dish. Heat the tortillas one at a time for approximately 30 seconds in the microwave long enough to soften so they roll without breaking. Too hot or too long, then they get too stiff). Dip warmed tortillas into sauce. Fill with small amounts of zucchini mixture, cheese, olives and chili. Roll the enchilada and place in dish. When you have filled the dish with 8 enchiladas, top the dish with the remaining cheese, olives and chili. Pour the remaining enchilada sauce over the entire dish. Bake 15 to 20 minutes at 350 degrees.

Enchilada Sauce    
1/2 c. onion, chopped
1 clove garlic, minced
1 tbsp. olive oil
1/2 c. vegetable stock
1 c. tomato puree
2 tsp. chili powder add more if desired to suit taste
1 tsp. cumin
Salt and pepper, to taste
Saute onion and garlic in oil. Add the remaining ingredients, bring to a boil an simmer for about 1/2 hour. (1 can tomato paste can be substituted for the tomato puree. Add water until you reach the consistency that you like).

PS TO TUNA CASSEROLE. IF IT GETS TOO THICK, JUST POUR IN A LITTLE MILK AND STIR. WILL NOT CHANGE TASTE.

ALSO, THIS ONE(ZUCHINNI CASSEROLE  IS ESPECIALLY GOOD THIS TIME OF YEAR. CHEAP, DELICIOUS, AND TOO EASY. CAN BE USED A MAIN OR SIDE DISH. AGAIN, CAN BE MADE IN A LARGE FRYPAN.

WASH, AND SLICE A LARGE ZUCHINNI OR EQUIVILANT AND PLACE IN PAN. SLICE A LARGE ONION, STIR IN AND SAULTE TILL SOFT- NOT MUSHY. POUR OVER THE TOP I CAN DICED OR CRUSHED TOMATOES. HEAT THROUGH. SEASON W/ S & P. OVER THE TOP SPRINKLE ABOUT 1/2 BAG GRATED SHARP SHEDDAR (OR MORE IF YOU'RE A BIG CHEESE LOVER). COVER AND HEAT TILL CHEESE MELTS. DELISHHHHHHHH

HOPE YOU ENJOY AS MUCH AS WE DO. IT'S A NEVER FAIL, AND REALLY, IT'S GOOD ENOUGH TO SERVE GUESTS. I'VE BEEN MAKING IT FOR YEARS.

My families favorite cassarole is mexican chicken its very good, and when your on a very tight budget you can use very little chicken & still feed a family of 4.

4 chicken thighs boiled(it is better if you use more & some white meat too, but this is the min. to get away with)

1 cn cream of mushroom

1cn cream of chicken

1 cn rotel (or cheap version)

1 bg doritos (or cheap version)

sliced cheese

in a cassarole dish or cake pan, shred the boiled chicken and lay down in pan.  In a bowl mix together the soups & rotel.  Pour ontop of the chicken.  Add a layer of sliced cheese and a layer of crushed nacho cheese tortilla chips.  Bake in oven 15 min at 350 or until cheese is melted.  This is good with a pound of ground beef too or you can add a can of whole kernel corn.

I do something like this but use hamb. meat.  :)
