Monday nights are awful for us so I always make Hamburger Helper or something like that. We are having a Complete Meal the Fettachini Alfredo one with green beans and corn on the cob and Wheat rolls.

I am making fried Italian chicken cutlets, baked potatoes and broccoli. I cut the chicken breast cutlets thin, dip them in egg and batter them with Italaian seasoned breadcrumbs. Then I fry them up and drain on paper towels. They cook up pretty fast. I microwave the potatoes until a little soft to touch and throw them in the oven to bake and get a little crisp on the outside. I steam my broccoli in the microwave in a little water,  a drizzle of olive oil, seasoned salt and garlic powder. It's fast & easy and my daughter LOVES chicken cutlets.
