Chocolate

 For years I have used the Hershey's cocoa recipe for cupcakes or cakes. It's delicious and everyone has become accustomed to "nini's chocolate cake" for bdays etc.

That being said I've started messing around with tried and true.  Everyone says "Don't change your recipe".  Well yesterday I finally performed the sacrilege on the Hershey's recipe(LOL).

I used butter instead of oil.  I increased the cocoa  to 1 cup and decreased the sugar to 1 3/4 cups.  Then I added chopped bittersweet Ghiradelli chocolate(toss the bits with flour to keep them from sinking).

You would NOT believe these cupcakes.  They are heavenly without any frosting.  I'm making them again today and using a glaze(melted chocolate with sweetened condensed milk).

Try the cocoa recipe first then use this version.

I would LOVE a chocolate cupcake right now. They sound delicious!
