I am coming to you for help!!
I recently learned that I have a severe issue with gluten that could cause a potentially life threatening situation (if untreated - I'm being treated) because of a lack of ability to absord essential vitamins and nutrition. I'm not thrilled but now that I know, I can adjust. However, I have absolutely NO experience with gluten-free diets.
Do you have (and if you do, what are they) favorite gluten-free recipes?
Aside from recipes without gluten what do you use to substitute for wheat products and items containing gluten? Ex. I just learned that tofu noodles exist and will be trying them. I'm not just looking for substitutes, but also recipes naturally free of gluten. Also, I'm still learning what items contain it - like soy sauce for example - so that I can avoid them... so much to learn very quickly.
