Egg salad

I was wondering if anyone had egg salad recipes? I just had the best one yesterday. Thanks

Mine is very simple - boiled eggs, mayo (real), yellow mustard (just a bit to taste), salt, pepper and sometimes a dash of nutmeg instead of pepper.  I also like mine on slightly toasted bread (wheat).  My hubby likes to mix tuna in with it but I am not too fond of that.

I also do deviled eggs this way - add the stuff to the yolks and use a pastry bag and fancy tip to fill the whites.

Dilly Egg Salad

3 hard-cooked eggs, chopped
1/4 cup small-curd cottage cheese
1 celery rib, chopped
2 tablespoons dill pickle relish
3 tablespoons mayonnaise
1 teaspoon Dijon mustard
Salt and pepper to taste
4 slices bread
Lettuce leaves

In a bowl, combine the eggs, cottage cheese, celery, relish, mayonnaise, mustard, salt and pepper. Spread 2/3 cup on two slices of bread; top with lettuce and remaining bread.

Creamy Egg Salad

1 package (3 ounces) cream cheese, softened
1/4 cup mayonnaise
1/2 teaspoon salt
1/8 teaspoon pepper
1/4 cup finely chopped green or sweet red pepper
1/4 cup finely chopped celery
1/4 cup sweet pickle relish
2 tablespoons minced fresh parsley
8 hard-cooked eggs, chopped

In a mixing bowl, beat cream cheese, mayonnaise, salt and pepper until smooth. Add green pepper, celery, relish and parsley. Fold in eggs. Refrigerate until serving.
