Carrot Cake
- 3 c. blanched almond flour
- 1 1/2 tsp. salt
- 1 tsp. baking soda
- 1 Tbsp. cinnamon
- 1 tsp. nutmeg
- 5 eggs
- 1/2 c. honey
- 1/4 c. melted coconut oil
- 3 c. grated carrots
- 1 c. raisins
- 1 c. chopped walnuts
In a large bowl combine the dry ingredients. In a separate bowl, mix the eggs, honey, and coconut oil. Add carrots, walnuts, and raisins to the wet ingredients and mix well. Stir the dry ingredients into the wet ingredients and mix well.
Spread batter in 2 well greased 9 inch round cake pans. Bake at 325° for 35 minutes.
Cool to room temperature.
Can spread with cream cheese frosting made from 1 block cream cheese, 1/4 c. butter, and 1/2 c. honey or maple syrup.
All I can say is WOW! on this one! I made 1/2 recipe (using 2 eggs) and baked it in an 8x8 inch pan. It was moist and full of flavor. We didn't frost it, just dusted it with powdered sugar and that was enough.
We had this for my diabetic mom's birthday cake!

You can probably find it in a health food store. I order mine online from Honeyville Farms' website. It's low carb/high fiber.

I pay between $25 - $30 for 10 lbs., but that will easily last us for 6 weeks or more. I don't do a lot of baking, though. I use the almond flour for pancakes, dusting meats, making gravies, and the occasional batch of cookies along with various other Paleo/primal dishes.
