Cake help

I am new to this forum , I don't have diabeties but I am hypoglycemic and both my parents have diatbeties also two f my sisters have it as well. I was raised onteh diabetic diet, but never remember a special cake. I am in need of some help because I am making a friends daughters 1st bday cupcakes and there are goign to be people with diabeties attending and she wants them to enjoy some cake as well. Any recipes you ladies know of? Also frosting recipes?



HAVE YOU HEARD ABOUT INFLAMMATORY BREAST CANCER?! IT CAN'T BE DETECTED BY MAMMOGRAM AND HAS NO LUMPS! SOMETIMES CAN LOOK LIKE A BUG BITE. PLEASE EDUCATE YOURSELF IN THIS AREA!

On cakes of any kind of being a diabetic and also teaching some of cakes,cookies,etc,I use apple sauce for sweetness and a little bit of canole oil,I Also use this apple sauce on my tamale mix and very little lard or oil on masa

There are gluten free cake mixes that have much less of an impact on blood glucose levels, and stevia is a wonderful, safe and natural sweetener.

Pillsbury has some good sugar free cake mixes that you could pick up for a couple bucks at a grocery store.

Thanks for the tips, ladies....

I sure do love cake-especially with chocolate (using bittersweet Dark Chocolate powder).  I also have a taste for Hummingbird Cake and have looked for recipes that will make it for Diabetics.

Substitute stevia for sugar--add an extra egg beyond what is called for in the cake mix, and use milk in place of half of the water.  Stevia also in the frosting.  Cream butter(or coconut oil), stevia and some cornstarch, plus whatever coloring and or flavoring (i.e., cocoa, vanilla, or other extracts) for the frosting.
