Favorite dinner of the week

So what was your families favorite dinner of the week?  Suprisingly enough, my family's fav dinner was baked lemon chichen with brown rice, and frozen boiled vegetables.  It was so simple!!!

On a sadder note, I undercooked the chicken in the stirfry tonight.  yuck  :(

I made a pretty mean chicken parm yesterday.  Well at least my version of it.

I coated the chicken thighs in flour, egg and seasoned bread crumbs (will pepper and garlic salt added)  Then browned in some olive oil flavored spray then baked the rest on the oven.  Then I put some spagetti sauce and chesse on top.

there are three fav meals here at our house. home made pizza with a whole wheat no fail pizza dough, cream cheese chicken in the crockpot and lemon caper chicken with varies sides. well four if you count dh's hamburger stroganoff.

Do you buy the wheat pizza crust or make it yourself?   Where do you buy or would you mind sharing a recipe?  Thanks!!!

it is home made! no i don't mind sharing! i will try to post it tomorrow!  my kids absolutely love it! (i think because they get to help make it, although my dd tells me she would rather have my pizza than any other)  it calls for flax seed, which is good for cholesteral, but have recently read that it is not good for people with diabetes. i no longer put that in.  but i will be sure to post it.

found it on another board  HOMESTYLE DIABETIC RECIPES

It is called Whole Wheat Pizza Dough-No Fail Recipe

1 cup all purpose-flour ( i use unbleached/non-enriched)
1/2 cup whole wheat flour
2 Tbsp ground flax seeds ( i no longer put this in as it is not really good for people w/diabetes)
1 x envelopes quick rising yeast
1/2 tsp salt
2/3 cup very warm water
2 tsp olive oil
2 tsp liquid honey
1 Tbsp cornmeal
olive oil (for preparing pan)

(sauce and any toppings you desire)

In a medium bowl, combine both flours, flax, yeast and salt.  Mix well

Measure warm water in measuring cup, then stir in olive oil and honey.  Pour mixture over dry ingredients and mix using a wooden spoon to form a ball.  Turn Dough out onto a lightly floured surface.  Knead for about 1-2 minutes.

Spray or lightly coat a medium bowl with olive oik and place dough inside.  Cover with plastic wrap.  Let rise in warm place for about 20 minutes.

Meanwhile, lightly coat a 12 inch pizza pan with olive oil and dust with cornmeal.  Preheat oven to 425 degrees F.

Once dough has risen, turn out onto a lightly floured surface an, using a rolling pin, roll dough out and fit onto the pizza pan making a small edge for crust.

Top with sauce and toppings and bake for about 12-15 minutes.

Ohhh that cream cheese chicken sounds interesting. Would you care to share that one???? We did the wheat dough pizza and the family LOVED it.....I'm going to see if I can improvise on Stuffed Manicotti!!! I'm still looking for something that can suffice for Cannoli shells!! LOL. If I can find that...I shall be a Goddess in my Home!!!! LOL

Here is the Cream Chees Chicken recipe. i put two different ones, as there are a couple variations.  but i used the first one.  instead of putting it over noodles, i put it over rice the second time and everyone liked that one even more!

Cream Cheese Chicken

4 boneless chicken breasts
2 tablespoons melted butter
1 pck. dry Italian salad dressing

1 can condensed chicken soup (i use cream of mushroom soup)
8 ounces cream cheese (i use the reduced fat- fat free is not always healthier)
1/4 cup water (i add some chicken bouillon)
minced onion
optional - celery and carrots

pour water in bottom of crock pot, then add the chicken.  drizzle melted butter over chicken and sprinkle with dry Italian dressing.  add pepper to taste.  i add carrots, celery and onion roughly chopped around the chicken for more veggies and taste. 
cook low 6 hours.  45 minutes before done, mix soup and cream cheese (i melt in microwave for a few minutes to combine until smooth).  add mixture to crock pot and continue cooking on low for 30-45 minutes.
i sever this over noodles.  the sauce is rich and YUMMY!

Glad to hear everyone like the pizza dough! the kids are always wanting me to make that one. usually it is a friday night thing... pizza and movie family night!
