For a 9x13 sponge: preheat oven to 350
separate 12 eggs.
beat whites to stiff peaks
add 12 Tbsp white sugar
add 12 Tbsp flour and the yolks alternating 2 yolks for 2 Tbsp.
add 1 tsp vanilla
add 3 tsp baking powder.
add 1 tsp xantham gum.
pour into greased and floured pan. Bake 30 min or until cake springs back when lightly touched.
