New to a GF diet... HELP?!

My daughter was having problems with loose and watery stools for weeks. (she is 19 month old) and after going to the doctor a few times he put her on a GF/DF diet for a week. The difference was AMAZING! I have been reading the book The Gluten Connection and it made me decide that I should try a GF diet as well. I have suffered from fatigue, headaches/migraines and sever joint pain for years. I have an appointment with a rheumatologist in a couple of week to get checked for Ankylosing Spondylitis. It seems as though a lot of my symptoms could be being caused by a gluten sensitivity. I need tips on going GF and I really need some meal ideas that include the following... meat, grain, fruit and veggie. I do daycare and participate in the food program. This means I have to feed my daughter the same thing as the rest of the kids unless she is diagnosed with a food allergy and has a prescription for non-gluten foods. I would also love recommendations for good GF recipe sites and/or cookbooks! Thanks in advance for any advice!

We use the book the squeaky gourmet. A friend wrote it. The hardest thing for us was the bread and cereals. My daughter was diagnosed at 2 so I know how hard it is. I have 3 girls and only 1 has celiac.

Don't use prepackaged spices from like McCormack it contains gluten to stabilize it.

I'd substitute a starchy veggie in place of grains in any meal plan.  The only one we can tolerate is white rice.

Sometimes gf foods can be more expensive. I've done daycare before too, and i've had to make special foods or have parents bring special foods for children. I would get a script for your dd so that you can feed her to meet her needs, just as any other parent who brings their kid to your would want to make sure they/you can meet their kids individual needs too. I understand the food program, but if your doctor won't give you a script for this purpose, than i would also find a different/new doctor.

I have RA (in the family with what you may have) and have recently gone gf. i feel it helps with the inflamation.
