gluten-free butter biscuits

Gluten-Free Butter Biscuits

  • 2 1/2 c. almond flour
  • 1/2 tsp. salt
  • 1/2 tsp. baking soda
  • 1/4 c. butter at room temperature
  • 2 eggs, room temperature (can put them in warm water to warm up if you don't want to leave them out on the counter to warm up)

Combine almond flour, salt, and baking soda.  In another bowl, mix together butter and eggs.  Add to dry ingredients and mix with wooden spoon.  Divide dough among 8 well-greased muffin cups in a muffin pan.  Bake at 350° for about 15 minutes.

Do they turn out fairly fluffy, or are they heavy and dense?

They're not a fluffy biscuit...it's hard to get that without a lot of baking powder working with dairy milk.  They're not super dense, though.  I've had worse.

Not bad, but not too fluffy.  I found that if I beat the eggs in a blender until really frothy and light, the biscuits were better.

If I remember right (I've tried a few recipes for biscuits), no.  I was able to cut them and enjoy honey or jam on them.
