As a market manager I've had the experience of a vendor describeing his product on application to the market and then showing up with an entirely different product. I've had to tell people they can not come to our market. I'm not entirely comfortable with this but it comes with the job. How do you decide who gets to come with what product and who isn't welcome?

We really don't have guidelines as to who can come and who can't. If they have something to sell then they are allowed. We have senior checks here and those are only used for fresh vegetables only. Oh, and as long as you have the proper insurance and you respect the markets rules. You are allowed. If there is an issue at ANYTIME you will be asked to leave. We are from North Iowa, so pretty much anything goes!! At one market they have someone come in and make fresh homemade ice cream for sale by quarts and pints cones and dishes!! They buy the fruit from the vendors right there! We have a hispanic family that comes with fresh homemade tortillas and has the homemade salsa to go with it!
We don't care what you sell!! We need vendors, we feel that more different types of vendors, more people will show up to see what there is to offer!
We have had to ask a couple of people to leave, we just had the state people call and talk to them and from there they made the decision. They had our input of course state hd final say.

Do you do a juried show? Where they actually have to send pictures of their products?? Have in the contract somewhere where they can only sell what it says on the their sheet. If they want to add items to their tables, they can apply for those too, with pictures or samples. A lot of the big shows do this, it's not totally unreasonable.
