I swear - I swear - I swear an oath. You cannot mess these up - and as long as you eat them chilled (yes, you have to wait) - you will NEVER give this recipe up.
Cheesecake Squares:
1/3 c butter or margerine softened
1/3 c firmly packed brown sugar
1 c all purpose flour
1/2 c finely chopped walnuts
1/2 c granulated sugar
1 large (8 oz.) pkg. cream cheese softened
1 egg
1/2 t. vanilla
2 T milk
1 T lemon juice (any kind you chose - trust me)
In a large bowl beat with an electric mixer - butter and brown sugar until creamy. Then, using a fork, blend in flour until mixture resembles fine crumbs. Stir in walnuts. RESERVE 1 cup mixture for topping. Then, firmly press remainder into bottom of GREASED 8 " sq. pan. 350 degrees - 12 - 15 minutes or until lightly browned.
Meanwhile (back at the ranch) - in a smaller bowl, beat granulated sugar, and cream cheese until fluffy. Add egg,, vanilla, milk and lemon juice, beat until smooth..
Pour cream cheese mixture over baked crust; sprinkle evenly with remaining crumb mixture.
Return to oven and bake for about 20 minutes or until top is lightly browned. Let cool in pan on rack, then cut into 2" squares. Store covered in refrigerator.
