An Old Recipe Needed For A Jelly Roll, My Mamaw Said She Use To Make These Around The 60's&70's, They Were Very Popular Then I guess. I Didn't Know Where To Put This Topic I Hope This Is Ok.

Jelly Roll

4 egg yolks

1/4 cup sugar

1/2 teaspoon vanilla

4 egg whites

1/2 cup sugar

3/4 cup sifted cake flour

1 teaspoon baking powder

1/4 teaspoon salt

Oven 375 degrees

Beat egg yolks till thick and lemon-colored; gradually beat in 1/4 cup sugar; add vanilla.

Beat egg whites till soft peaks form; gradually add 1/2 cup sugar and beat till stiff peaks form.  Fold yolks into whites.  Sift together flour, baking powder, and salt; fold into egg mixture.

Spread batter evenly in greased, waxedpaper-lined 15 1/2 x 10 1/2 x 1- inch jelly-roll pan.  Bake in moderated oven (375) about 12 minutes or till done.

Loosen sides, turn out on towel sprinkled with sifted confectioners's sugar.  Peel off paper.  Trim crusts.  Starting at narrow end, roll cake and towel together; cool on rack

Unroll, remove paper; spread with favorite filling.  Roll up.  Makes 10 1-inch slices.


This recipe is from the Better Homes and Garden Cookbook that my Mom had when I was a child.  I still use it today.  LOL.  Enjoy!
