I am officially a vegetarian. Just wanted to see if anyone else here is also :) Maybe you can share a recipe. One of my favorite things is homemade vegetable soup.

Hey there! I am a vegetarian. I have some great tofu recipes and a tuna substitute recipe that my whole family loves. Hang on and I will give you my two favorites. Well, let me ask first, do you like tofu?

Mock tuna recipe
14 oz. can artichoke hearts, drain then blend in processor or blender on pulse. Textute should be similar to tuna fish
8 oz. of drained chick peas, blend these on pulse as well
1/2 an onion chopped fine (optional)
Celery chopped fine
1 tablespoon nutritional yeast
1 teaspoon kelp
1 & 1/2 teaspoon soy sauce
1 teaspoon rice vinegar
Add vegan mayonnaise a teaspoon at a time until you like the consistency.
Nutritional yeast, kelp, vegan mayonnaise can be found at any health food store. You can use regular mayo if you want.
