This is my favorite easy supper to prepare around 2:00 and get it in the oven for 3:00 - go get the kids from the school bus, come back and have "bag unpacking time" (LOL) get settled and then voila - dinner is ready! Easy clean up - one pot!
Oven Stew
1 1/2 lbs cubed meat ( beef, lamb, bison etc)
4 med potatoes cut into cubes ( I actually cut mine to wedges)
4 med carrotts, cut bite sized
1 cup coarsley chopped onion
1 1/2 cups cubed yellow turnip ( optional)
14 oz canned tomatoes with juice ( I blender mine a bit to break them up)
1 1/2 tsp salt
1/4 tsp pepper
1 tsp sugar
1/2 tsp ground rosemary ( optional)
1/4 tsp galic powder ( or 1 clove minced)
1/2 cup water
combine first 5 ingredients in small roater with lid, mix remaining 8 in a bowl and pour over top. Cover, bake in 300 F oven for about 2 1/2 - 3 hours. Makes 8 cups
What are your favorite fix it and leave it dishes?
