Freezing cookie dough
Keeping some frozen dough on hand means you can bake just as many, or as few, cookies as you like without having to whip up a batch of dough. Form the dough into balls and arrange them on a sheet pan to freeze. Once the individual balls of dough are frozen, place them in a zip-lock freezer bag and store in freezer. When needed, take them out of freezer, just the amount you need. Place them on a cookie sheet and bake. They will take a few minutes longer to bake than if they were not frozen.
