But instead of the oven, put them in the freezer until firm. You don't have to worry about them spreading, so you can place them closer together than you would if you were baking them. Then when they're frozen, place them in a heavy-duty sip-lock bag, write the baking temp and time on the bag, and store in the freezer. Then when you need a few cookies, take out what you need, place them on a baking sheet and bake. You will need to bake them a few minutes longer than usual.
