Pear Butter

 A friend just gave me ALOT of pears this morning and I remember having Pear butter as a child. Would anyone have a recipe they'd like to share?

I found one!

20 medium pears

4 c. sugar

1/3 c. orange juice

1 tsp. grated orange peel

1/2 tsp. nutmeg

Wash and quarter pears.  Cook until soft, adding only enough water to prevent sticking (about 1/2 c.).  Press through a sieve or food mill.  Measure 2 quarts pear pulp.

Combine pear pulp and sugar in a large saucepot, stirring to dissolve sugar.  Add remaining ingredients.  Cook until thick enough to round up on a spoon.  As mixture thickens, stir frequently to prevent sticking.  Ladle hot butter into hot jars, leaving 1/4 inch headspace.  Add lids & rings & tighten.  Process 10 minutes in a water bath.  Yields about 4 pints.

I made peach and apple butters last year. My only advice is to cook it till it almost looks too thick-mine was a little runnier/looser than I was hoping for, but still delicious!!
