I just bought a canning set (for water bath) and made jam (my first time) last night. It's blackberry jam. I ended up with 7 8oz jars. Well, 4 of the jars when I tilt them over it doesn't run so I'm assuming it set right. 3 of the jars, when you tilt them it runs, so it didn't set right. How can I fix these 3 jars? Why did 4 of the jars set but 3 not?

I am sure an expert will be along to answer your question, but when I made jam and it did this it was because it hadn't set long enough. The set of jam teh day after means little I have found. Jam often takes a couple weeks to really set up and thicken. At least in my experience. No idea why. I left them alone(figured it could always be ice cream topping!) and they set up a couple weeks later. They also set up when I opened them up and they were in the fridge.
