It is not considered safe to can pickled eggs at home; in fact, it led to deaths in the past. I sometimes make them and keep them in the fridge, however. I usually just use leftover brine from cucumber pickles I've canned; when my husband eats through a jar, I boil some eggs, peel them, and stick them in the brine in the jar. Let them sit a day or two (refrigerated) before eating. I wouldn't let them sit in the refrigerator for more than a couple of weeks.
