Whoop! Pumpkin Butter Recipe! (included) Turned out great!

I am canning right now. I am putting up pureed pumpkin a and tomorrow i am making pumpkin butter.

This pumpkin butter can also be used to make breads, pies and of course on our toast!

2 Cups  Cooked and pureed fresh pumpkin (can also use plain canned pumpkin)

1 Cup white sugar

1 Cup brown sugar

1 tsp ground cinnamon

1/4 tsp ground nutmeg

1/2 tsp ground ginger

1/8 tsp ground cloves

Combine all ingredients in crock pot and stir well till all is combined very good. Cook on high for 3 hrs. Stirring occasionally. It will thicken as it cooks. Do not let burn or stick. After it is done fill the pint jars or 1/2 pint jars leaving 1/4in head-space and seal with lids and rings. Process in water bath canner for 40 mins or pressure canner@ 10 lbs of pressure for 20 mins.

note. The batch i am cooking now i ran out of brown sugar and had to sub I cup of white sugar tho i do not advise you do this for more than a cup. It didn't thicken as much as first batch.

1 large pumpkin will make roughly 2 1/2 batches of pumpkin butter.

p.s. this pumpkin butter recipe can also be used to make pies and bread with.

Pies: 1 1/2 pints of pumpkin butter

         2 eggs

         1-12 oz can evaporated milk

  Prebake pie shell 1-2 mins @350. Mix all together and pour in pie shells. Bake @425 for 15 mins. Turn down to 350 and bake for 45 more mins.

Pumpkin Bread: Take Banana Bread recipe and sub pumplin butter in place of bananas.

I used the pumpkin butter for Thanksgiving Pie, it turned out better (way better) than the canned stuff. Very creamy, everyone commented how great it was. :) Thinking of making some pumpkin bread today!

There used to be a button, but the CM rulers took away the ability to shortcut. I used that all the time, bummer.

For some reason I was under the impression that you can't can pureed pumpkin. Am I wrong?
