Apple Pie in a Jar

28 cups sliced, peeled apples
1/4 teaspoon nutmeg
4 1/2 cups granulated sugar
1 teaspoon salt
1 cup cornstarch
10 cups water
2 teaspoons cinnamon
3 tablespoons lemon juice

Pack apple slices tightly in quart jars. Make a syrup from sugar,
cornstarch, cinnamon, nutmeg, salt and water. Cook and stir until thick and
bubbly. Add lemon juice, seal and process jars in water bath 20 minutes.
Yield 7 quarts.

Each one quart jar makes one 9 inch apple pie

Texas Jalapeno Jelly
2 Jalapeno peppers, seeded & chopped
3 medium green peppers, cut into 1 inch pieces, divided
1-1/2 cups vinegar, divided
6-1/2 cups sugar
1/2 to 1 teaspoon cayenne pepper
2 pouches (3 ounces each) liquid friut pectin
about 6 drops green food coloring, optional

Puree jalapenos, half of the green peppers & 1/2 cup vinegar in a blender or food processor; pour into a large kettle. Repeat with remaining green peppers and another 1/2 cup vinegar. Add sugar, Cayenne pepper & remaining vinegar to kettle. Bring to a rolling boil over high heat;, stirring constantly. Quickly stir in pectin and return to boil. Boil for 1 minute stirring constantly. Remove from heat; skim off foam. Add food coloring if desired. Ladle into hot sterilized jars, leaving 1/4 inch headspace. Cover with lids. Process for 10 minutes in a boiling -water bath. Yields 7 half pints

Do you do green tomato relish or chow chow's?
My husband tried the relish for the first time and it's GONE. We both love it, it's good on so many things!

I do have some different recipes for both of them.  They're on a recipe program on my other computer so I can't post them right now but I will get them posted for you as soon as I can.Smile

I posted some recipes for them under the Relishes (recipes) heading. My personal fav. is zucchini relish, I'll post a recipe for it if anyone would like.  I'll be glad to help with any questions you may have.
