Anyone know how to cook eggplant?

I have one in my fridge and have never used it before.  I'm making cranberry chicken with rice tonight and wanted to try using it (since my asperagus went bad....).  What is an easy way to make this? I have a cold, and 3 energetic kids so my energy level isn't the greatest.

Is there a way to steam it and have it turn out well?

Cook it  whole over an open flame, till burnt. Peel it and take the insides and smash them up adding salt, pepper and garlic. Serve on bread with thinly sliced onion and tomato. I know it sounds odd and fairly unappealing but I swear this is SO YUMMY. It is a Romanian appetizer, called eggplant salad.( This is a great camping dish )

my grandma always fried it but she used eggs and a breading on it and then fried it yummy i miss fried eggplant

I love fried eggplant! Kids will too! Just use eggs, flour and oil. Cut the eggplant into slices (like tomato slices). Coat it with the egg. Put it in flour and then drop into the oil. Add salt and pepper or vegetable seasoning to taste!

 

Or, my husband has grilled it before too. He cut it into slices. Put extra virgin olive oil on it and then sprinkled it with vegetable seasoning (like Mrs. Dash). He then put it on a "screen" (not sure what it is really called) and onto the grill. I'm assuming you could probably do this in the oven too if you don't want to grill.

I know my ex mother in law used to bake it with parmesan cheese but I never got the recipie.

Or, you could make baba ghanouj! I love it and have been eating it for about a week now with crackers or veggies lol

I am a Canadian,breastfeeding (it IS best, there is nothing even close to that nutrition and bond), co sleeping, extended rear facing (if you don't rear face to the maximum of your seat, you're NOT doing all you can to protect your child), baby wearing, Non spanking (I want my kids to respect me, not fear me) ANTI- CIO, homemade baby food making, cloth diapering, organic (chemical free household!) recycling mama to TWO! My husband is my equal and best friend, not my master and I believe basic health care should be a human RIGHT, not a privilege.

It's an awesome eggplant and tahini dip! It's great on crackers, pitas or as a spread on toast etc.

I usually make a dip with 3 eggplants, but you could do a smaller recipe if you didn't have much. Do you have sesame seeds to make tahini? All you need to do is roast them in the oven for a few minutes and then throw them in a blender.

Quick tip:  if you layer the sliced eggplant in paper towels for about 1/2 hour before you fry them, you won't get soggy eggplant.  Also, cutting them kind of thin is key.

yes iam spanish i make egg plant different

u take it cut in a circle kind off thin beat  some eggs but a little salt and pepper the eggs will be in matter plz peal the eggplant take it deep in the eggs and then in all purpose flour and fry in deep oil but be carefull because the oil will rise then put it on med and keep turning     sorry the batter i meant and then put in some towel paper for the grease because it will be greases ok.butterfly
