Ok moms..... I think it would be fun for all of us to share fun and easy summer recipes. here is one of my favorite.......

Chicken Skewers

1/3 cup hot water

1/4 cup kraft teriyaki BBQ sauce

1/4 cup creamy peanut butter

1/4 cup soy sauce

1/4 cup chopped cilantrooney dijon

2 tbsp. grey poupon honey dijon mustard

1 lb. boneless skinless chicken breast halves, cut into 12 thin strips.

Prep: 10 min.  Total: 2 hr 17 min. (incl. marinating)

Mix: water, BBQ sauce, peanut butter, soy sauce, cilantro, and mustard in medium bowl with wire wisk.

Pour: half of the mixture into a large resealable plastic bag. Add chicken seal bag. Shake gently to coat chicken. Refridgerate 1 to 2 hours to marinate. Refridgerate remaining sauce mix for dipping.

Preheat: grill to medium-high heat. Thread chicken onto 12 skewers in ribbon fashion; discard any remaining marinade in bag.

Grill: 5 to 7 minutes or until chicken is cooked through. Serve with the reserved dipping sauce.

Makes 4 servings, 3 skewers each.

For a complete meal: serve over cooked rice or noodles with vegies.

Have your kids eat a fresh and fruity salad to keep their mouths happy.

RECIPE INGREDIENTS:

1 (17-oz.) can fruit cocktail, drained
1 1/2 cups miniature marshmallows
1/4 cup drained maraschino cherries, halved
2 medium bananas, sliced
1 medium apple, coarsely chopped
1 1/2 cups frozen whipped topping, thawed, or sweetened whipped cream
Lettuce leaves

1. In large bowl, combine all ingredients except whipped topping and lettuce; mix lightly. Gently fold in whipped topping. Serve immediately, or cover and refrigerate until serving time.

2. To serve, spoon salad onto lettuce-lined plates. If desired, garnish with additional maraschino cherries.

COOL SUMMER CHICKEN SALAD  

 

1. 3 lg. chicken breasts, skinned
2. 1 jar Great Impressions orange marmalade fruit salad dressing
3. 1/3 c. diced cantaloupe
4. 1/3 c. pecan pieces.
5. 1/8 c. sliced grapes, cut in half

 

1. Place 4 tablespoons Great Impressions over chicken (distribute over all pieces). Cover and bake at 375 degrees for 20-45 minutes.

2. Cool and remove from bone. Dice.

3. Add remaining ingredients with 1/2 cup Great Impressions.

4. Mix and serve chilled.

TUNA NOODLE CASSEROLE  

 

1 can tuna (7 1/2 oz)
1 can cream of chicken soup
1 small can green peas
3 cups noodles, cooked
1/2 teaspoon salt
1/2 cup milk

 

Flake tuna in casserole dish. Add soup to tuna. Add noodles, salt, and peas. Stir all together.

Bake 30 minutes at 350 degrees.

1 c. butter
1 c. Dr. Pepper
4 tbsp. cocoa
2 eggs
1 tsp. vanilla
2 c. sugar
1/2 c. buttermilk
1 tsp. soda
2 c. flour
1 1/2 tsp. cinnamon

Heat butter, cocoa and Dr. Pepper. Mix well and set aside.

Cream eggs, sugar and butter, milk and soda. Add flour and cinnamon alternately with Dr. Pepper mixture, then vanilla.

Pour into greased and floured 9 x 12 inch pan and bake at 350 degrees for 25 to 30 minutes. Ice with Dr. Pepper Icing.

DR. PEPPER ICING:

1/4 c. butter
1/4 c. Dr. Pepper
3 tbsp. cocoa
1 (16 oz.) box confectioner's sugar
1 tsp. vanilla
1 c. chopped nuts

Heat butter, cocoa and Dr. Pepper and blend well. Stir in other ingredients. Mix thoroughly and ice cake.

I know this is a oldy, but I just love it for summer. Light and so easy to prepare.

Jello Cake

1 Box of White Cake Mix

1 Box of Jello (whatever flavor you like)

1 Tub of whipped Cream

Make white cake mix as directed. Bake and let cool down.

Follow Jello directions.

Take knife and cut little slits in the cake all over. Then pour jello over the top of the cake, make sure cover all the cake.

Refrigerate

Put whip cream on top of cake when ready to serve.
