Mexican casserole

This recipe is inexpensive and goes really far

2-3 lbs. ground meat- we use a combo of ground turkey, turkey sausage and taco flavored gr. turkey we get from Wal-mart

1 package of low sodium taco seasoning

1 jar salsa

1 large can fat-free refied beans

 1 small container of sour cream

6 flour tortillas or 10 corn

1 8 oz package of shredded cheddar cheese or colby jack

 brown the meat  and mix with the taco seasoning, add refried beans and sour cream and salsa.. in a greased 9-11 cake pan, layer the meat mixture,  the tortillas and cheese like you would a lasagna. starting with the tortillas, then the meat mixture,then the cheese.  Keep going until you run out tortillas. if you like you can cover the casserole with enchilada sauce but it is really good with out it. Bake on 350 for 20-30 minutes.

that sounds really good. but if i made i would have to take out the salsa, refried beans and sour cream. Dh will not eat them. so by the time i got finished i might as well just made tacos. it really stinks having a dh that's a picky eater.
