Here's my favorite breakfast omelette ever! It's not only delicious, but it's really good for you!

Sante Omelette
2 eggs, beaten
Handful of fresh spinach
Handful of mushrooms
Feta cheese

In a hot skillet, saute mushrooms in olive oil till tender. Remove from skillet and set aside. Saute spinach for a couple seconds, just till wilted. Remove from skillet.
Add a little more olive oil and pour eggs into the skillet. Add remaining ingredients.

The omelette sounds delicious.  It's definitely going on my menu this week.  I had an omelette similar to this at IHOP and it was great!!

Here is my favorite Saturday breakfast:

French Toast

1 egg per slice of bread makes it taste best.

12 eggs
1 1/2 cups milk
1 tsp. vanilla
1/2 cup sugar (I prefer brown sugar)
cinnamon to taste

Heat griddle or skillet to medium heat.  Mix all ingredients well.  Add one slice of bread at a time and let it sit for about 1/2 minute, until it's absorbed a good amount of liquid (almost ready to fall apart).  Smear a pat of butter on griddle then add soppy bread. (*TIP* Pick it up with spatula, so it doesn't fall apart.)  Repeat until griddle is full.  Let each slice cook for approximately 3 minutes, flip and let cook approx. another 2 minutes.  They should be a nice golden brown.

Top with syrup, powdered sugar, strawberries, or whatever is your favorite topping.

I don't like DRY French Toast, but I don't like it dripping after it's cooked either.  Depending on your burner, you may need to adjust the temperature down and add a little more time to cook it all the way through without burning it.

Banana Pancakes

Your favorite pancake recipe or mix (I confess, I use Great Value Extra Fluffy mix from Walmart, it's good!)
Very ripe bananas

Mix enough batter for ~18 pancakes, mix in 2 large mashed bananas.  It's best to cook them on a griddle so you have more control over the temp (and you can do 6 at a time so it's faster)  I normally cook pancakes at 350 degrees, but with the extra moisture from the bananas, it's necessary to cook them at 300 so they cook all the way through without burning on the outside.  They taste a lot like banana bread.  I topped  them with sliced strawberries and the kids didn't even ask for syrup.  You could also mash the strawberries and mix them in to the batter.  You can use a lot of different fruits, just mash them up or puree and stir into the pancake batter.
