Ice Cream!
It's summer! Who here makes her own ice cream in the summer? I find it to be a fun and interesting project, especially for kids.
The big issues with ice cream making seem to be texture and flavor balance. Home-made ice cream is invariably "rockier" than store-bought, too much cream in the mix will produce a "slimy" texture, and ice creams with an egg base can become grainy if not "pre-treated" by chilling the custard overnight.
The toughest flavor of ice cream to make is certainly chocolate. Using actual chocolate in the mix is tricky; it'll get grainy on you or it won't be "chocolatey" enough. Using cocoa in the mix will "dry" it and you'll get the grainy problem again, compounded by a bitter aftertaste. I have found that using both produces decent results, but it never seems "chocolatey" enough unless I add shaved chocolate to the end result and then I have the grainy problem again.
