The humble potato. How many times has it saved dinner for us? And ironically, we tend to MASH them rather a lot.
A Solution for Leftover Mashed Potatoes
Chantilly Potatoes
3 cups leftover mashed potatoes
1/2 cup heavy cream
1/2 cup grated Swiss or Gruyere cheese
Preheat the oven to 350 degrees. Butter a shallow 1 and 1/2 quart baking dish. Spread the potatoes in the dish. Whip the cream until stiff, fold in the cheese and salt and pepper to taste. Spread the cream and cheese mixture over the potatoes and bake for 25-30 minutes, or until the top is delicately browned.
