so i know the true Mexican way of making enchiladas is with corn tortillas, but i LOVE flour tortillas so thats how i make mine......i made this without a recipe......so yummy
1lb ground beef
1/2 onion diced
1 large can refried beans
1 (16oz) jar Pace Picante Sauce
10 flour tortillas(or enough for the beef mixture)
2 cans of sliced black olives(optional)
shredded queso fresco
shredded sharp cheddar
2 small cans or 1 big can of medium enchilada sauce
directions:
preheat oven to 400.
coat bottom of baking dish with some enchilada sauce.
brown ground beef with onion until done, drain. put meat back into pan. Add jar of picante sauce, mix well. Add can of refried beans, mix well.
spoon some beef mixture onto a burrito size flour tortilla. Add some shredded queso fresco, add some black olives, roll up into burrito form.
place rolled up burritos and place in baking dish. Continue until your baking dish is full or meat mixture is gone.
pour more enchilada sauce(as much as you desire) over top of burritos, add shredded queso fresco and shredded sharp cheddar to top, add black olives.....
bake in oven until cheese is melted and enchilada sauce is bubbly around the edges.

ooo that sounds good. I normally dont like corn tortillas but my mom told me to cook them in hot oil for less than a minute to make them soft, but I like the way your recipe sounds I just might have to try it out one day. Thanks
im not a big fan of corn tortillas either unless im making rolled tacos(taquitos i guess is what they are called....when you make these enchiladas let me know how you like them.
