What's for dinner tonight?

I am stumped at what to do for dinner tonight. I am looking for something different. We tend to have the same things over and over again. My family is not really picky so trying new things is good!

Apparently my dad is making blueberry waffles (with fresh blueberries...well ones we bought fresh and froze awhile ago).

I was planning on making mac & cheese because I had a taste for it.  My  husband wants me to make chicken and dumplings.  I have everything but the Jiffy mix to make the dumplings and I have no money to buy the mix.

I am making home made enchiladas. DH loves them. My 6 and 5 yr old do too, but my 3yr old doesn't like anything except noodles and pizza. lol.

Pot roast with lots of veggies.  Maybe some bisquits or croisonts.
