Dinner!

Whats on the menu for tonight. Im making something new. I hope we likey! Its that cake bosses guy recipe.

Pasta e Lenticchie

INGREDIENTS

2slices extra-thick cut bacon, cut into dice
1small onion, chopped fine
1stalk celery, chopped fine
1carrot, peeled and chopped fine
Salt
2plump cloves garlic, peeled and minced
1cup brown lentils
114.5 ounce can plum tomatoes with their juice, cut or torn into pieces
5cups water
Chunk of parmesan rind (optional)
1cup cooked al dente, drained and rinsed ditalini or other small pasta shape
2Tablespoons extra virgin olive oil
FOR SERVING:
Best-quality fruity olive oil
Grated parmesan
Coarse grindings black pepper

PREPARATION:

  1. Heat a large soup pot over medium heat. Add the bacon pieces and stir to coat in the oil. Allow to cook until softened, translucent and some fat is rendered. Add the onions, celery and carrots, stir to coat. Sprinkle with a pinch of salt and sauté until softened. Add the garlic and sauté until fragrant. Tip in the lentils and stir to coat. Add the tomatoes, their juices, the water, a pinch of salt and optional parmesan rind. Bring soup up to a boil and reduce to a simmer. Simmer, stirring occasionally, until the lentils are just about fully tender, 20-30 minutes. Add the ditalini and cook an additional ten minutes until the pasta is cooked to taste. Correct seasoning with salt.
  2. Serve in bowls with a drizzle of good olive oil, grated parmesan and black pepper.

I pulled out some chicken breasts to thaw when I ran home on my lunch.

Any ideas ladies?

 sounds good. I'm not feeling up to deal w/ the dinner mess just yet. So....whatever the kids can handle on their own I guess.

Nothing wrong with cereal or sandwiches for dinner. Our ick nights are generally grilled cheese and tomato soup.

 I may stop and get some corn on the cobb to eat with dinner. No idea why but it sounds SOOOO good right now.

Will the store even have any it being winter? HMMMMMM

If you have a jar of salsa, you can always make salsa chicken in the oven. Put the chicken in a baking dish, pour salsa over. I cover the dish w/ foil and bake for 40 min then take foil off and melt cheese over the top. Serve w/ a salad, or corn or rice or whatever.

I'm making pizza tonight. Just the girls and I so only putting cheese on it, goat cheese and pizza cheese.

 yeah, I think it will end up being a sandwich night. Last night dh took care of dinner. I was in bed ALL day. Today I can move, but I'm still not feeling the dinner thing tonight. The kids are pretty self sufficient now a days, so all will work out ;)

My store does but Im thinking it might be storage corn. LOL

I've got chicken and dumplings in the crock pot. They smell so good!!
