birthday cake?

I already have chocolate bday cake recipe. now i need another one....no chocolate or berries either (mil has allergies). anyone have any fav recipes? Im making them into cupcakes btw.

Check Our Best Bites website. They have a really good and easy recipe. It's starts with a cake mix. Yum makes me wanna make it

Here's a Basic Yellow Cake:

2 c cake flour (or all purpose)

2 tsp baking powder 

1/2 tsp salt

1/2 c butter, softened (room temp.)

1 c. sugar

3 large eggs (room temp)

2 tsp vanilla ( or almond flavoring)

3/4 c milk

Preheat oven 350. Grease and flour 2 9 inch round cake pans.

In a bowl, cobine flour, b. powder, and salt with a whisk.

Cream butter and sugar until light and fluffy. Beat in eggs, one at a time. Add vanilla and mix until completely combines. Slowly add flour alternately with milk. At end of addition batter should be smooth. Divide between 2 pans.

Bake Yellow Cake for 20-25 minutes. Cool 5 minutes in pan, then invert onto a rack and cool completely before frosting.

If you do not want to use 2 round pans you can use a 9x13 pan. Just bake 350 for 30-38 minutes.

You could do a poke cake.  They're super easy.  Pick a cake, pick a pudding that would go with it (yellow & banana, yellow & vanilla with chocolate frosting).

Then there's Pudding Lust Cake

And then Chocolate Chip Peanut Butter Pound Cake

Also, Ice Cream Crunch Cake

And Nutella Swirl Pound Cake with Espresso Glaze

And Cinnamon Roll Cake (which is VERY good)

Buttermilk Spice Cake with Brown Sugar Frosting:

Ingredients:

  • 2 1/2 cups sifted cake flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ginger
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup butter, soft
  • 1/2 cup light brown sugar, firmly packed
  • 1 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/4 cups buttermilk
  • Brown Sugar Frosting, below

Preparation:

Sift together the flour, baking powder, soda, salt, cinnamon, ginger, cloves, and nutmeg. Cream butter in a mixing bowl; add brown sugar, granulated sugar, eggs, and vanilla extract. Beat at high speed of an electric mixer for 5 minutes, or until light and fluffy. Scrape bowl often. Add sifted dry ingredients, alternating with buttermilk, mixing at lowest speed just until smooth.

Pour batter into two greased and floured 8-inch round layer cake pans. . Bake at 350° 30 minutes, or until a wooden pick or cake tester inserted in center comes out clean. Cool in pans on rack for 5 minutes, turn out of pans onto racks to cool completely.

Brown Sugar Frosting

  • 2 egg whites
  • 1 1/2 cups light brown sugar, firmly packed
  • 1/3 cup cold water
  • 1 tablespoon light corn syrup
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Combine all ingredients in top of double boiler. Beat 1 minute at high speed of electric mixer. Place over rapidly boiling water and cook, beating constantly, 7 minutes or until peaks form. Remove from heat and continue beating until spreading consistency is reached. Frost tops and sides of cooled spice cake.

If you want to do something out of the ordinary, you can make a trifle.  I found a Caramel Apple one that goes with fall.

Try THIS coffee cake recipe and top with the frosting recipe below...

Cinnamon Coffee Frosting:

1 tsp coffee granules (instant)
12 tsp ground cinnamon
1 pinch salt
12 cup softened butter
3 cups confectioners' sugar
13 cup milk
1 tsp vanilla extract
In a small bowl, mash instant coffee with the back of a spoon until powdery. Stir in cinnamon and salt. In a large bowl, beat the butter until smooth, then stir in spice mixture and vanilla. Alternately beat in confectioners' sugar and milk until desired consistency is achieved.

She has that on the site too, with cupcakes.  Then she has the big 13x9 sheet cakes with pudding.  The Oreo one is SOOOO good.
