Probably Nanaimo bars. I'm at work though so I can't share it.

Probably meatloaf and stew, and I don't make them very often. I hate to cook, so I go for as easy as possible.

Hmmm...maybe chicken enchiladas

I don't use a recipe, just toss it together.

I don't think any of my recipes are really difficult

If it's difficult, I'm not making it. I'm not much of a cook....LOL

I'm another one who doesn't make anything too difficult.  My great-grandmothers Belgium pie recipe is a little daunting, it takes the better part of the day to make.  However, I'm forbidden from sharing "the recipe" with anyone.  lol  Family secrets.

I haven't made any recipes that was difficult, I just don't like the lengthy time it takes to prepare and cook/bake.

I don't think there is anything that I would consider too difficult.

Not really complicated but a lot of prep my enchiladas:

1 lb ground beef (though I use 2), onion, 1 package chili mix, 2 8 oz cans tomato sauce, 1 can refried beans, 10 tortillas, 1 cup sour cream and 1 can cream of mushroom soup.  Cheese

Brown the meat and onion.  Drain.  Ad chili mix and tomato sauce.  Simmer 5 minutes.  Add beans.  Spread into tortillas and roll and put in a baking dish seam side down.  Mix soup and sour cream in a bowl and then spread over rolled tortillas.  Bake in a 350 degree oven for 35 minutes.  Spread cheese and bake another 5 minutes.
