potato question

I bought blue new potatoes at the farmers market. They are so pretty and they taste ... pretty much like red potatoes. I want to grow some but have never seen them anywhere. Then I thought - hey can I just let the few that I have left sprout?  Or because they are new potatoes ( about 1 1/2 inches) will they not sprout the eyes?

Yay! And they do have tiny little eyes on them.  Any suggestions on how to get them to sprout faster? dark room?  sunlit countertop?

Mine always manage to sprout wherever they are  LOL

I'd suggest dark, room temp.  That's where mine seem to do their best sprouting...or you can plant them without any sprouts.  As long as the planted piece has eyes, it'll grow.
