i have a chicken pot pie recipe thats really good...and totally easy too

2 cups cooked chopped chicken breast(you can use store bought rotisserie chicken)

1 can carrots, drained

1/2 frozen green peas

1 (10 3/4oz) can cream of chicken soup

1 cup chicken broth

1 1/2 cups instant biscuit mix

1 cup milk

1 stick butter, melted(i use PAM instead of the butter)

salt and pepper(optional)

Preheat oven to 350. In a greased 2 quart casserole dish layer the chicken, carrots and peas. Mix the soup and chicken broth, and season with salt and pepper. Pour over the layers. Stir together the biscuit mix and milk and pour this over the casserole. Some mix may be leftover. just add enough to the top to cover it. Drizzle butter over the topping(or just spray PAM). Bake until topping is golden brown, 30-40mins.
