Candied Roasted Pecans

I used to have an awesome recipe for these pecans. I haven't made it in about a year though and lost it.

I remember it was roasting the pecans in the oven first, then boiling together sugar, (or brown sugar) vanilla, (honey?) butter and i think a little salt.

Mixing the roasted nuts into the pan then spreading them out with a spoon on wax paper, then rolling them in a mixture of cinnamon and sugar.

Urg, I wish I could recall everything- does anyone have this recipe or one like it?

 Apparently no one on CM knows about it. I'm still looking all over for the recipe and making a batch now by memory- we'll see how it turns out.

no idea how to make them but you can buy them from the nutty bavarian stands at the mall.

My sugar and spice pecan recipe

1 egg whites
1 lb pecan halves
1 tsp salt
1 tsp water
1 cup suga
1 tsp sugar

In a bowl beat egg white and water until fluffy.  Put pecans halves in the bowl and stir until nuts are coated with egg white (you can add a splash of vanilla if you want at this point).  Set nuts aside.

In another bowl combine sugar, salt, and cinnamon until well mixed.

Pour cinnamon sugar over moist nuts.  Mix well,

Generously butter a cookie sheet and place nuts on pan in single layer.  Bake at 300 for 1 hours if nuts are giant sized.  Bake for 45 mins if nus are medium sized or have been frozen.

Bake up and *stir* nuts every 15 minutes.  Remove from oven and cool.  (and make a second batch while the first cools cause they go fast!)

Ok, made two batches two different ways...one with regular sugar and 1 egg white, one with no egg white- instead butter- and regular sugar and light brown sugar...both have cinnamon. Just waiting for the second batch to cool now.
