Please help! My hubby is working all day today when it is supposed to be his day off. I wanted to bake a sweet treat to surprise him when he gets home but I only have 1 egg and can't get to the store. All my regular recipes use at least 2 eggs, so I'm at a loss. Any ideas?

    1 egg

    1 cup sugar

    1 cup peanut butter


    MIx it up, put them on a baking sheet.  350 for about 8-10 minutes.  Best cookies ever!

  • I have all the baking basics - flour, sugar, cocoa powder, baking powder and soda, butter, oil, assorted chips, etc. He likes a lot :) I can't think of a baked good he wouldn't like

  • Oooh, he does love peanut butter, but I'm running low, not sure I can scrape out a cup. Shoot! Any other ideas?

  • I found this

    • 2 cups cake flour
    • 1 cup granulated sugar
    • 3/4 cup milk
    • 4 tablespoons shortening
    • 1 egg
    • 3 teaspoons baking powder
    • 1 teaspoon vanilla


    Directions

    1. Combine all ingredients and beat well for 2 minutes.
      • Pour into loaf pan and bake at 350 for 40 minutes.

  • OP I googled one egge dessert recipes and a ton of stuff popped up.  I'll look through my books in a sec.

  • You can add some chocolate chips as well and OMG.  The recipe doubles easily too.

  • i love these! eggless sugar cookies

     

    1 1/2 c. powdered sugar
    1 c. (tub) butter
    1/4 c. skim milk
    1 tsp. vanilla
    1/2 tsp. almond extract
    2 1/2 c. flour
    1 tsp. cream of tartar
    1 tsp. baking soda

    Mix ingredients together. Refrigerate for 2-3 hours. Roll out, use cookie cutters. Bake 350 degrees for 8 minutes.
