Please help! My hubby is working all day today when it is supposed to be his day off. I wanted to bake a sweet treat to surprise him when he gets home but I only have 1 egg and can't get to the store. All my regular recipes use at least 2 eggs, so I'm at a loss. Any ideas?

Does he like peanut butter cookies?  If so....

1 egg

1 cup sugar

1 cup peanut butter

MIx it up, put them on a baking sheet.  350 for about 8-10 minutes.  Best cookies ever!

I have all the baking basics - flour, sugar, cocoa powder, baking powder and soda, butter, oil, assorted chips, etc. He likes a lot :) I can't think of a baked good he wouldn't like

Oooh, he does love peanut butter, but I'm running low, not sure I can scrape out a cup. Shoot! Any other ideas?

You can add some chocolate chips as well and OMG.  The recipe doubles easily too.
