 For those that make weekly menus, whats on yours this week?






If you want, do Saturday and Sunday, too!

I'm going grocery shopping in a few hours, so I have to figure something out and then I'll fill mine in.

Monday- Pork Loin, Green Beans, Sweet Potatoes

Tuesday- Spaghetti with Garlic Bread

Wednesday -Grilled Chicken Tenders, Roasted Red Potatoes, Collard Greens

Thursday- Steak Tacos with Rice

Friday- Veggie Pizza (homemade) with Caesar salad

Saturday- Eating out - We are going to a college football Game

Sunday- Baked Chicken, mashed cauliflower, peas

Monday: Soup and Sandwiches

Tuesday: Homemade Chili and cornbread

Wednesday: Beefaroni *hump day is always a lazy day here*

Thursday: pizza *it's Kiara's birthday and that's what she wants her bday dinner to be :)*

Friday: Homemade mac n cheese

Saturday: Spaghetti *it's Angelina's birthday and that's what she wants her bday dinner to be :)*

Sunday: chicken bowtie pasta


Monday: Beef Stroganoff

Tuesday: Sweet n Sour Chicken with Sticky Rice

Wednesday: Tuna Casserole

Thursday: Eggs n Hashbrowns

Friday: French Toast

Saturday: Stir Fry

Sunday: Salsa Chicken and Corn

Monday: Pizza

Tuesday: Chili w/cheese and fritos

Wednesday: Banquet turkey dinner, mashed potatos, green beans, macoroni and cheese

Thursday: Meatloaf and mashed potatos

Friday: Chicken alfredo, salad

This is one of those things I have never been able to do. Set up a weekly menu..   We always end up eating on a whim. Eating whatever we are in the mood for that day..  Making a menu has just never worked out in our

These r some recipes I am making:

Oven Baked Herb Omelet

1 clove garlic
2 tablespoons olive oil
16 Basil leaves (10 chopped, 6 for garnish)
1 tablespoon fresh chopped parsley
1 tablespoon fresh chopped thyme
Salt to taste
Fresh pepper to taste
2 tablespoons fresh grated Parmesan cheese
9 eggs
1 cup milk

Preheat oven to 400. Chop garlic and mix with olive oil and herbs.
Bake herb mixture approximately 10 minutes. Beat eggs. Add milk,
salt, pepper and cheese. Pour over herb mixture. Gently mix. Cover
with foil and bake approximately 30 minutes in a 11.7" (2 qt.) Pyrex
dish until fluffy.



•·                     1/2 teaspoon olive oil

•·                     1/2 cup diced zucchini

•·                     1/4 cup minced onion

•·                     1/2 clove garlic, peeled and minced

•·                     1 cup diced fresh tomatoes

•·                     1 tablespoon chopped fresh basil

•·                     1/8 teaspoon salt

•·                     1/8 teaspoon ground black pepper

•·                     2 (6 ounce) halibut steaks

•·                     2 tablespoons and 2 teaspoons crumbled feta cheese


This recipe's Ingredients were scaled to yield a new amount. The directions below still refer to the original recipe yield of 4 servings.

•1.                   Preheat oven to 450 degrees F (230 degrees C). Lightly grease a shallow baking dish.

•2.                   Heat olive oil in a medium saucepan over medium heat and stir in zucchini, onion, and garlic. Cook and stir 5 minutes or until tender. Remove saucepan from heat and mix in tomatoes, basil, salt, and pepper.

•3.                   Arrange halibut steaks in a single layer in the prepared baking dish. Spoon equal amounts of the zucchini mixture over each steak. Top with feta cheese.

Southwestern Cheese and Corn Chowder

2 tablespoons butter
1 small onion, chopped
2 cups chicken or vegetable broth
2 cups fresh corn or 2 cans corn, drained (15 ¼ ounce each)
2 potatoes, peeled, cut into 1/2 inch dice
1 red pepper, diced
1 rib celery, sliced
1 cup milk
2 cups shredded cheddar cheese
½ teaspoon cumin
¼ to ½ teaspoon cayenne pepper
½ teaspoon garlic powder
½ teaspoon salt (or to taste)

I don't do a menu. I run my own business. Sometimes I don't have time to cook dinner and we order out.
