 We are having chicken tacos tonight and I have no clue what to make with them. So any ideas? And what are you having for dinner tonight?!

We are having a whole roast chicken and roasted veggies (I love my no fuss Sunday dinner!)

Good with chicken tacos are fiesta beans (chopped jalapenos, cheese, taco seasoning mixed in the beans, tomatoes, onion)

I would make a side of spanish rice, and a side of refried beans with cheese. You could forget the refried beans and just add some corn and black beans to the rice. Now I'm getting hungry!

What kind of rice? My mom makes spanish rice, but she is at work so I can't call for the recipe. LOL!

I make these green chilie potatoes that are yummy with pretty much ANYTHING !!

Make lilke you are making mashed potatoes , drain , add stick butter, garlic, diced green chilies, pepper jack cheese , cheddar cheese, salt to taste bake 350 for 30 minutes.

SHORT-CUT SPANISH RICE  

3 cups cooked rice
1 teaspoon Taco seasoning
1 1/2 cups Tostitos Medium Salsa
garlic powder, to taste
salt and pepper, to taste

Quick Version (Side Dish):

Steam or boil rice according to package directions to measure about 3 cups. Cook rice slightly on the dry side (steaming is best). Minute Rice may be used for an emergency side dish.

Combine ingredients and cook 5 minutes (no more), just until heated through. Season to taste and serve.

 

EASY SPANISH RICE

 

4 cups rice
2 cans diced tomatoes
2 packets taco seasoning
salt, pepper, chili powder, and cumin to taste
several sprigs torn fresh cilantro
4 cups water

Put all ingredients in rice cooker and stir, will cook automatically until rice is done

Ingredients

  • 2 tablespoons oil
  • 2 tablespoons chopped onion
  • 1 1/2 cups uncooked white rice
  • 2 cups chicken broth
  • 1 cup chunky salsa

Directions

  1. Heat oil in a large, heavy skillet over medium heat. Stir in onion, and cook until tender, about 5 minutes.
  2. Mix rice into skillet, stirring often. When rice begins to brown, stir in chicken broth and salsa. Reduce heat, cover and simmer 20 minutes, until liquid has been absorbed.

This is the rice I make whenever we have mexican:

3 tbsp veggie oil

1 c rice

1 tsp garlic powder

1/2 tsp cumin

about 1/3 of an onion

1/2 c tomato sauce

2 c chicken broth

Heat up the oil then add the rice & onion. Cook until rice starts to turn a little yellowish. Add the spices, tomato sauce & chicken broth. Bring to a boil, then turn down to a medium low. Cook about 20 minutes.

corn pudding (I am too lazy to search down my recipe but this one is close enough) and spanish rice with fried apples for desert (peel and slice apples.  melt butter in skillet, lay apples in, sprinkle brown sugar and cinnamon on top of apples and saute)

Corn Pudding

Ingredients

  • 5 eggs
  • 1/3 cup butter, melted
  • 1/4 cup white sugar
  • 1/2 cup milk
  • 4 tablespoons cornstarch ( or use flour)
  • 1 (15.25 ounce) can whole kernel corn
  • 2 (14.75 ounce) cans cream-style corn

Directions

  1. Preheat oven to 400 Degrees F (200 degrees C). Grease a 2 quart casserole dish.
  2. In a large bowl, lightly beat eggs. Add melted butter, sugar, and milk. Whisk in cornstarch. Stir in corn and creamed corn. Blend well. Pour mixture into prepared casserole dish.
  3. Bake for 1 hour.
