I make mashed sweet potatos.

Peel and dice 6-8 sweet potatos. Boil in salted water until tender. Mash with 1 stick of softened butter and 1 tablespoon of pumpkin pie spice, adding 1/4 cup of light brown sugar OR 1/4 cup of real maple syrup. Spoon into serving dish, top with chopped roasted pecans.

This recipe is awesome I made it on sunday (minus the pecans my aunt allergic).

3 cups mashed sweet potatoes

2 eggs

1/2 cup sugar

1/4 cup half and half cream

1/4 cup butter softened

2 teaspoons vanilla extract

1/8 teaspoon salt

Topping:

1/2 cup packed brown sugar

2 Tablespoons flour

1/4 cup cold butter cubed

1/2 chopped pecans

In a large mixing bowl, combine the first seven ingredients, beat until light and fluffy. Transfer to a greased 11in by 7 in by 2 in baking dish ( I used a 13 by 9 casserole dish)

For topping, combine the brown sugar and flour in a bowl, cut in butter until crumbly. Fold in pecans and sprinkle over sweet potato mixture

Bake uncovered at 350 degrees for 30-35 minutes or until a knife inserted near the center comes out clean

3-4 sticks unsalted butter (not margarine)

simmer in cast iron skillitt until slices are tender stirring often...
