Help!!! Cooking catastrophe!

So I thought I would get a head start and make sweet potatoes tonight. The recipe I am using said to make the potatoes for 35 min. then skin. They didn't feel soft enough so I baked for an hour then steemed for 20 min and figured they had to be done.

So I skin them and start to mash, turns out they wern't done and now I have hard potatoe chunks all mixed in with the mashedness! This is for 20 people so I really don't want to toss it all and start again, plus I hate peeling potatoes! Any suggestions on how to remedy this situation?

maybe put it in a casserole dish with a touch of olive oil for moisture or cover with foil to trap moisture and bake. Keep checking until it all seems soft ?
